Some of the easiest recipes are the best ones. The ones that go viral. The ones that you don’t need to write down. A quick verbal rundown of the ingredients and process are so easy to remember, there’s no need to write it on a recipe card or print it out from the web. I can’t help but think of the movie Steel Magnolias and Truvy’s recipe for “a cup-a cup-a cup”. I’ve never actually made that one, but it has the spirit of that culinary oral tradition.
This recipe is not only ridiculously simple, but it’s also a healthy snack! Perfect for fitting in those New Year goals and resolutions. When people ask me what they can do to make a change in their diet for the better, the first piece of advice I usually give is to add more high quality protein. When we do that, other positive diet changes fall in line naturally. We end up less “hangry” and eat fewer snacks. We often have a lower simple-carb load. It can have positive impacts on blood sugar regulation.
This Buffalo-Ranch Dip is packed with protein from cottage cheese and the other ingredients are low calorie with a big punch of flavor. It’s great for dipping carrots and celery, mini sweet peppers, or your favorite cracker. It’s an ideal afternoon snack!
Recipe Notes: As a Culinary Nutrition Instructor, I aim to make ingredient swaps that are healthy and accessible. In this recipe, I like to use store-bought Buffalo sauce made with avocado oil. Most grocery store options do contain inflammatory seed oils BUT it’s very easy to make your own! 1:1 parts of melted butter and hot sauce whisked together plus a dash of garlic powder. That’s it! Then use in this recipe as normal. Using low-fat cottage cheese will keep the calorie count low.
