Creamy Tomato Soup

Cold weather means comfort food…am I right? I think about food basically all the time, but as soon as my weather app shows cold temperatures, all I can think about are soups and stews, crockpot dishes, and warm drinks.

Creamy Tomato Soup

This Creamy Tomato Soup goes perfectly with a grilled cheese sandwich or some of your favorite crackers. It’s very easy to prepare and takes only a few minutes to put together.

It’s perfect to make for someone special, take to a sick friend, or make for a week of lunches.

In this recipe, I think it’s important to use good tomatoes. Yes, “good” canned tomatoes are actually a thing. The best tasting canned tomatoes are San Marzano tomatoes. You can get them at the grocery store for about $4 per can. Or at Trader Joes for about $2. Costco sells a 3 pack for about $5 so that’s my go-to place for tomatoes. One 3-pack will make one batch of tomato soup and one batch of homemade pizza sauce!

When it’s time to blend the soup, you can use an immersion blender. I prefer this way, but if you don’t have one, you can transfer the soup to a blender then back to the pot after it’s blended.

Ingredients
  

  • 2 tbsp butter
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp each fresh or dried chopped basil and thyme
  • 1 tbsp salt
  • 1 tsp ground black pepper
  • 1/2 cup white wine
  • 2 14oz. cans San Marzano tomatoes, undrained
  • 1/2 cup heavy whipping cream

Instructions
 

  • In a medium to large pot melt the butter over medium heat. Add the garlic, basil and thyme and stir for 30 seconds until it becomes fragrant but not burned.
    Add the diced onion and cook stirring frequently until the onions begin to become translucent. Add salt and pepper.
    Add the white wine and cook for about 2 minutes. Add in the tomatoes and stir to combine all ingredients. Cook over medium low for about 20 minutes to meld the flavors together.
    Remove from heat and blend thoroughly with an immersion blender or transfer to a blender in batches to blend, then return to pot. Add the heavy cream and simmer on low for at least 30 minutes or up to all afternoon.
    Serve with grilled cheese sandwich or a "crunchy" like croutons or crackers.

  1. This recipe looks amazing! My peeps love tomato soup but I’m not crazy about canned soups, so I want to give this a go! Do you think I could put this in a crock pot after blending, so it’d be ready when I got home from work? Or would that be too much?

    • Yes! On low, of course. You can add a little cream or broth when you get home if you need a thinner consistency. 😊
