Let’s talk specialty baking – like Keto or gluten-free recipes….nothing is more disappointing than spending a gazillion dollars on specialty ingredients and then whatever you baked turns out terrible. It’s happened to me plenty of times.
The good news is that there are plenty of easy recipes, that aren’t full of expensive ingredients (relatively speaking) that can easily satisfy a sugar craving or make a nice dessert of mid-day treat.
I recently discovered Bon Appeteach on Instagram and was instantly impressed by all her recipes. And very impressed by her “book club” (AKA drink club) which looks awesome. The first recipe of hers I tried was her Keto Biscotti and the first time I made them I left them in the oven a bit to long so they were kind of brown, but very tasty! The recipe below is my own adaptation, that I didn’t burn and turned out great!
I really loved having these alongside a cup of coffee mid-afternoon while the girls are napping and I’m waiting for my sweet boy to get off the bus…before all H-E-double hockey sticks breaks loose, of course.
With Biscotti, you bake them twice, kind of like a crouton. If you follow the cooking times exactly, you shouldn’t burn them like I did the first time. Even if they feel soft in the middle after the second bake, they will harden as they cool. I used melted Lily’s chocolate chips in this recipe.

Matcha-Mint Chocolate Biscotti (Keto-friendly and Gluten-Free)

When combining ingredients, add 2 tsp matcha powder and 4 drops peppermint essential oil OR 1/2 tsp peppermint extract.
Omit almonds and drizzle with melted low-carb chocolate like Lily’s. I get mine from Thrive Market
According to the website, they are about 1g net carb each! They are keto and (of course) gluten-free.
