Is today the Monday-ist Tuesday ever? Coming off a three day weekend is always a little wonky, and it’s definitely one of those off-schedule, nothing is happening the way I planned days. Two out of three kids are under the weather so I am unexpectedly at the house all day. I don’t mind at all because I’m getting a ton of snuggles, but I do feel sad when little people feel bad.
Also…the freaking laundry!!!! I’m a little burnt out on laundry today, because when kids get sick, it’s non-stop laundry, NO JOKE.
One fun thing we did this weekend is take some time to relax and have some good snacks. If you know Robert and me personally, you probably know that we are very good at snacking. We can put away a snack tray like nobody’s business…I’m not kidding. Since changing my diet, the snacks have changed a bit, but I love a good snack and cheese spread is one of my favorites.
This recipe is one I make frequently because it’s really tasty and so easy. Everyone in the family loves it. My son really likes to make tiny cheese sandwiches with crackers and recently discovered he can make triple-decker sandwiches, too. He is extremely proud of himself!
This cheese spread is great with cut up veggies or baby carrots, but if you like crackers with cheese and want to stay gluten-free or grain-free you can try Simple Mills crackers (my favorite) or your favorite crunchy snack. I get mine at THRIVE MARKET**.
This would make a great appetizer to serve at a party. Could be a great Superbowl snack, too!

Garlic Asiago Cheese Spread*
Ingredients:
- 8 oz shredded Asiago cheese
- 4 oz. cream cheese, softened
- 1/3 cup sour cream
- 1 head of roasted garlic (see below) OR 1 Tbsp garlic powder
- 1/2 tsp cracked black pepper or white pepper
To roast the garlic, cut the top off an entire head of garlic so the top of each clove is exposed. Drizzle with a small amount of olive oil and wrap in foil. Roast in a 350º oven for 20-30 minutes or until soft. When the garlic is soft, you can turn it upside down and squeeze the cloves out easily.
Add all ingredients to a food processor and pulse several times before blending on medium/low speed for 30 seconds or until smooth.
Serve in your favorite dish with crackers or veggies.
