
If you’re still feeling a little Irish this St. Patrick’s Day week, I’ve got a classic recipe from the British Isles that’s sure to hit the spot.
Seasoned ground beef in a light gravy topped with veggies and mashed potatoes, this dish is the perfect comfort food that will have you coming back for seconds. It’s easy to assemble and can be made ahead of time so you can heat and eat at dinnertime. It’s perfect with a loaf of my Irish Soda Bread.
Notes: As a Certified Culinary Nutrition Instructor, I aim to make dishes with clean ingredients that are nutrient dense. In this recipe, I love to use organic potatoes and veggies and 90/10 grass fed ground beef. But as always, use what you have. Make it easy with jarred minced garlic. - Preheat the oven to 400 degrees. Peel the potatoes and cut into chunks. Rinse and boil in salted water over high heat until fork tender. Drain and mash with milk, butter and salt, pepper and garlic powder to taste. Set aside.
- In a large skillet melt 2 tablespoons butter over medium heat and brown the beef until cooked and crumbled. Reduce heat to low and add in the broth, dijon and tomato paste. Add in garlic, 2 tsp salt and 1 tsp pepper. Mix to combine and simmer for 1-2 minutes.
- Transfer cooked beef to your favorite casserole dish and spread in an even layer. Layer veggie over the meat and then spoon the mashed potatoes covering the entire top. If you want, top with some white cheddar cheese. Bake for 15 minutes then set under the broiler for 3-4 minutes to brown the top. Serve right away with buttered bread and ENJOY.
