Put down the pumpkin spice people! It’s apple season….I have another great apple recipe that’s perfect for the beginning of fall. These are perfect for a slow weekend morning or make ahead of time to pop in the toaster for a snack or quick breakfast before the school bus. My kids ask for these a lot!
These pancakes are made with Einkorn flour – low-gluten alternative. It’s an unhybridized, organic wheat that bakes very well with any recipe you can throw at it. It makes velvety smooth and fluffy pancakes. I like Jovial brand which can be found on Thrive Market or sometimes at Whole Foods or The Fresh Market.
You can make these non-dairy by using almond milk and melted coconut oil instead of milk and butter.
The cinnamon butter takes it up a notch. Swerve with maple syrup, or my favorite, Choc Zero low carb syrup!

Apple Spice Pancakes with Cinnamon Butter
Equipment

Ingredients
- 2 cups Einkorn flour
- 4 tsp baking powder
- 1 tsp salt
- 3 Tbsp sweetener of choice I use Lakanto monk fruit sweentener
- 1 tsp cinnamon
- 4 Tbsp butter, melted
- 2 eggs
- 3/4 cup apple sauce (about two pouches)
- 1/2-3/4 cups milk or almond milk
Cinnamon Butter
- 4 Tbsp butter, softened
- 1 Tbsp sugar or sugar alternative like Monk Fruit
- 1 tsp cinnamon
