It’s TACO TUESDAY! In this crazy world we live in, isn’t it nice to have Taco Tuesday?
At my house, we eat tacos family style, and with a 7, 5 and 3 year old it can get pretty messy… My 7 year old eat the tacos normally, but half the toppings fall out in the process. My 5 year old eat hers “deconstructed” with a plate of shells and toppings all separated. And my 3 year old gets away with eating a big plate of shredded cheese and whatever fruit she can get her hands on.
My husband and I eat ours like civilized people while we sit, entertained by the 3 little monkeys at the table. It looks like a taco war zone at the end. But, it’s worth it for TACOS!
The thing a like about tacos is that it’s a blank page. Soft of crispy? Chicken, pork, beef, vegetarian? Last week we did brisket tacos with cheese, tangy slaw, and avocado on a crispy (AMAZING) grain-free shell.
Here’s a quick and easy slaw recipe that’s a GREAT taco topping. You could also put it in a sandwich (like BBQ pork – Memphis style!), or just as a summer side dish.
I sometimes substitute the fresh lime/orange juice for 4 drops each Young Living essential oils. You can find more essential oils info HERE https://familywellnessjournal.com/essential-oils/
What’s your favorite taco topping?
Enjoy! <3
