1-Minute Pizza Sauce

Okay mamas, let’s be real. Who else throws their menu plan out the window right around 5pm out of sheer exhaustion and lack of motivation to cook? This happens to me sometimes… and a lot more since “the ‘RONA”. Taco tuesday this week quickly turned into “how fast can I throw a salad together” after I realized it was 6pm and I had no tortillas.

Sometimes a quick pizza order is a lifesaver… but having spent so much time and energy trying to avoid gluten and sugar, I have learned that I can throw a pizza together faster than I can order one.

AND….

The sauce is so easy to make! Hear me out, friends. Yep, homemade pizza sauce only takes about a minute. You need:

  • ONE 28oz. can of tomatoes (I like San Marzano)
  • A blender or Ninja (or bullet)
  • 1 tsp each of salt and garlic powder
  • 1/2 tsp each of oregano, pepper, and onion powder

THAT’S IT. Blend until the tomatoes are pulverized. If you’re thinking ahead you can make a pizza dough for the crust. But if you’re cooking on a whim (like I am A LOT) you can use

  • Bagels
  • Ciabatta rolls
  • pre-made pizza crusts

A great gluten-free option is a brand called O’Dough’s – they make bagels and sandwich thins that are perfect for little pizzas. We also love the Kinnikinnick frozen gluten-free pizza crusts ($7 at Kroger).

Keep mozzarella and pepperoni on hand and you’re 15 minutes away from pizza for dinner. Remember, always bake pizzas at 425 degrees. It’s the pizza temp!
