Honey-Vanilla Fruit Salad

One thing I’m always doing is thinking about food (insert laughing emoji) ….honestly, I think about dinner while I’m eating lunch and I’m dreaming about my morning coffee as I’m washing the dinner dishes.  Food is delicious.  I love imagining the ways I can combine fresh ingredients to make something amazing.  Sometimes it’s time-consuming and convoluted, and sometimes it’s ridiculously simple – yet equally delectable.

The recipe I’m sharing today is an easy one to make and fun to share.  Fruit salad is fun for a Spring or Summer potluck table, too.  It’s such a colorful dish and the added honey and vanilla gives it an extra depth of flavor.  From a nutrition standpoint, I like fruit because whole fruits have fiber that are good for digestion, offsetting – dare I say, justifying – the fructose (fruit sugar).  

The lemon juice in this dish acts as a sort of a preservative, preventing the fruits from oxidizing and discoloring right away – while adding flavor, too.  The beauty of this recipe is not only that it’s simple, but adaptable and customizable.  Leave out or add whatever you like.

Honey-Vanilla Fruit Salad

Ingredients
  

  • 1 pineapple
  • 1 lb. strawberries
  • 1 small package of blueberries
  • 1 cantaloupe
  • 2 cups green grapes
  • 3-4 navel oranges
  • ¼ cup honey
  • ¼ cup lemon juice or 1 large lemon
  • 2 teaspoons vanilla extract

Instructions
 

  • Cut and prepare your fruit… Remove the top, bottom, core and rind of the pineapple and cut into 1-inch slices.  Cut similar size pieces of the cantaloupe, or use a melon-baller.  Wash and slice the strawberries.  Wash and dry the blueberries and grapes.  Peel and cut the oranges into 1-inch pieces.
  • Place all the fruit into a large tupperware container with a tight-fitting lid.  Add the lemon juice, honey and vanilla.  Secure the lid and gently toss to fully incorporate the ingredients.  Store in the container and transfer to a pretty serving dish to share.
