Journal Entry – Friday Favorites!

What a long, busy week!  We are STILL, BEGINNING to pack up our house and move.  And, while I’m excited, I’m so exhausted!  I mean.. 11 years of stuff has piled up and now we have to sort through.  Our yard sale is going to be MASSIVE, HA!

This week my friend, Jenny, came over and we got to chat and make hot cross buns.  Poor Jenny had to listen to me rant about our local utility company for the first hour but we made a good low-carb lunch with skirt steak and Creamy Gorgonzola Brussels Sprouts (only this time I used Parmesan) and some lattes (Bulletproof* for me!).

The kids are off today so we are going Targeting and then to the park to get our vitamin D.  Interesting side note:  we started my son on vitamin D drops this week because I’ve been reading about vitamin D deficiency, especially in the winter, and how it can effect the body (I’ll write more later), but we’ve had some very good days this week – which is kind of a shocker since it’s Easter week – so we are going to pay close attention and see if that’s a continuing trend.  Interestingly enough, I looked on PubMed and there are studies that have been done where kids with autism are given vitamin D and whether it helped them.  I want to dig deep into those this weekend.  We used Carlson brand D drops for kids from Thrive Market.

Here are some of my favorite things this week:

  • Hot Cross Buns – perfect for good Friday.  Baking is therapeutic, and they are so yummy.  win, win!
  • Pinterest-ing ideas for non-candy easter basket fillers – we are doing lots of play-doh and bubbles – should be cute!
  • Jilz Gluten Free Crackers – these are my favorite GF crackers I’ve tried – they have a nice strong sesame taste, which I LOVE!  And they are so great with cheddar or gouda.  Would be great with Gruyere, too, if you want to splurge.  Thrive Market* has a cool pack of snack size portions that are boxed up individually so you can throw them in your purse or diaper bag – they’re great!
  • Green Tea with grapefruit and ginger essential oil – so soothing on the tummy, great mid-morning drink.  Only ingest an EO brand you trust.  Check out my essential oils post HERE.
