Recipe – Cheesy Sausage & Peppers

This is one of our weekly mainstays because it’s low-carb and tasty.

My husband’s Italian aunt made sausage and peppers a lot and it was sausage links with pepperimg_7523s and onions in a roll.  The recipe is not that – not what our Italian-American friends think of as sausage and peppers which I LOVE…  But this one…THIS is cheesy and creamy and delicious, too!  And easy to make!

This meal is keto-friendly.  Or, you can serve it over rice, mashed potatoes, or Farro*(my favorite).  It’s great with a salad!

Ingredients:

  • 2 tbsp butter
  • 1.5 lbs ground sausage of choice (we like chicken parm sausage from Sprouts)
  • 3 bell peppers (red, orange, and yellow – or, green if you like)
  • 1 small yellow onion
  • Salt, pepper, garlic powder to taste
  • 1/2 cup cream
  • 1 cup grated Asiago or Gouda cheese

Directions:

Over medium heat in a large skillet, melt the butter then add onions, peppers, salt, pepper and garlic powder – cook until onions are soft and translucent.  Remove from pan and set aside.  In the same pan brown the sausage until cooked through, then add the onions and peppers back in.  Pour in the cream and simmer for about 1 minute.  Add half the cheese and stir until melted.  Remove from heat and transfer to casserole dish.  Top with remaining cheese.  Broil in oven for 2-3 minutes until cheese is melted on top.  Enjoy!
