Bacon Wrapped Stuffed Sausage Balls

These sausage balls are stuff with mushrooms, onions, and cheese.

Ingredients
  

  • 1 small package mushrooms chopped
  • 1 medium onion chopped
  • 1 tsp salt
  • 1/2 tsp pepper, garlic powder and (optional) Trader Joe's Umami seasoning
  • 2 lbs Italian sausage
  • 4 oz crumbled blue cheese
  • 4 oz cream cheese
  • 8-10 slices bacon

Instructions
 

  • In a large skillet melt 3 tablespoons of butter over medium heat.  Add in chopped mushrooms and onions and season with salt, pepper, garlic powder and whatever else you choose (I use Umami seasoning from Trader Joe's)
    Cook until the onions become soft and translucent.  Remove from heat and let cool slightly.  While still warm, add in the softened cream cheese and blue cheese.  Keep stirring until you have a well-blended mixture.
    Cover and set in fridge for at least half an hour to set.
    Meanwhile, cut bacon strips in half.  Set aside.
    Then, divide each pound of sausage into about 8-10 sections (I usually get 8).  Flatten each section on a cutting board to make a thin patty.
    When the filling has set, remove from fridge and put a small amount in the middle of each sausage patty.  Then roll up the sides of each one and inch together, roll, shape and smooth out each sausage ball.  
    After the sausage balls are put together, stretch each slice of bacon a bit with  your hands and carefully wrap it around each sausage ball.
    Set in a baking dish with the ends of the bacon (bottom of the sausage ball) facing down.
    Set in 325 degree smoker or oven for 35-45 minutes or until golden brown.
    Would be great served with mustard, ranch, or bbq sauce!
