Perfect Einkorn Dinner Rolls

An easy bake for a great addition to dinner.

Ingredients
  

  • 1/4 cup warm water
  • 1 pkg yeast (2 1/4 teaspoons)
  • 2 tbsp honey
  • 1 cup milk
  • 4 tbsp butter
  • 4 1/2 - 5 cups Einkorn flour
  • 1 tsp salt
  • 2 eggs lightly beaten
  • 2 tbsp melted butter

Instructions
 

  • Combine the butter and milk in a small saucepan over medium heat until the milk begins to scald (you will see a thin skin forming over the milk).  Remove from heat and set aside to cool
    In the bowl of a stand mixer fitted with a dough hook, add yeast, honey and warm water and allow to proof 5 min or until the milk mixture is slightly warmer than lukewarm.
    Add the milk mixture to the bowl and mix on low.  While the mixer is on, add the salt and eggs.  Then add the flour, one cup at a time until a sticky dough forms.  The dough should be pulling away from the sides of the bowl but will still be relatively sticky (more so than a dough made with all-purpose flour).  Let the mixer knead the dough for about 5 minutes.
    Turn the dough out into a buttered bowl.  Cover with plastic wrap and allow to rise in a warm place for about an hour, until doubled in size.
    When the dough has risen, turn it out onto a floured surface and knead briefly.  Flatten out with your hands into a large rectangle (about 11"x17") and use a pizza cutter to slice into buns (4 rows of 5).
    Place on a baking sheet with parchment or silpat, cover, and allow to rise once more for 1 hour.  Preheat oven or pellet grill to 350.
    Bake the rolls fro 15-20 minutes or until the tops are starting to brown and they sound hollow when you gently tap a knife on the top.
    Remove, brush with melted butter, cool and ENJOY!
