Grain-Free Dirty Rice with Andouille Sausage

Let’s talk about one pan meals. How great are they for weeknights. Like, throw a bunch of stuff in a skillet and something amazing and delicious comes out.

Really, though, you just need a few key components to make an amazing skillet meal. Most skillet meals have a starchy main ingredient made into a meal by veggies, sauce, and some kind of protein. If you like to stay low-carb, or grain-free – you have to think outside the box.

People joke about how cauliflower is a renaissance-man of veggies. Pizza? Cauliflower. Mashed potatoes? Cauliflower. Mac N Cheese? Cauliflower. It really is versatile, and this skillet meal is no exception.

This is my take on Dirty Rice – of course, I sub in cauliflower rice and it has a great texture and really takes on the flavor of all the seasonings in the dish. You can use Cajun seasoning in place of all the individual seasonings if you wish.

Grain-Free Dirty Rice with Andouille Sausage

Ingredients
  

  • 3 tbsp butter or avocado oil
  • 1 large yellow onion, chopped
  • 1 large green bell pepper, chopped
  • 1 lb cauliflower rice frozen or fresh
  • 1 can black beans, drained and rinsed
  • 3 tbsp heavy cream
  • 1/2 cup chicken broth
  • 1 tsp each – garlic powder, salt, celery salt
  • 1/2 tsp each – ground black pepper, onion powder, oregano, paprika
  • 1/4 tsp chili powder
  • Sour Cream (to garnish)
  • 2 stalks celery, chopped

Instructions
 

  • Cook Andouille sausage on grill, stovetop, or smoker until the skin begins to crack. Cool, then slice, and set aside.
    Melt butter or pour avocado oil into a large cast iron skillet over medium heat. Add onion, pepper, celery, riced cauliflower and seasonings to skillet and saute until soft.
    Add the black beans and sausage and stir. Add broth and cream and stir, cooking 2-3 minutes. Remove from heat and let stand 5 minutes.
    Best served in a bowl with a biscuit, or even in a wrap.

Notes

Vegan adaptation: omit sausage and replace cream with unsweetened almond milk.  Optional: replace sausage with okra or veggie of choice
 
Keto adaptation:  Omit beans (replace with veggie of choice or lower-carb black soy beans.
