- Cook Andouille sausage on grill, stovetop, or smoker until the skin begins to crack. Cool, then slice, and set aside.Melt butter or pour avocado oil into a large cast iron skillet over medium heat. Add onion, pepper, celery, riced cauliflower and seasonings to skillet and saute until soft.Add the black beans and sausage and stir. Add broth and cream and stir, cooking 2-3 minutes. Remove from heat and let stand 5 minutes. Best served in a bowl with a biscuit, or even in a wrap.
Notes
Vegan adaptation: omit sausage and replace cream with unsweetened almond milk. Optional: replace sausage with okra or veggie of choice
Keto adaptation: Omit beans (replace with veggie of choice or lower-carb black soy beans.
