It’s been a rainy week. I mean, month. I mean, REALLY RAINY year. Our little pond is a lake and our little ditch is now a stream. There are lots of muddy paws and muddy boots! Today I came home from the office and there were two ducks in our pond. I’m sure they won’t stay, but I’m glad they came for a visit!
So, as much as I’d like to be grilling out on the deck every day, it’s just too wet. I’ve been doing a lot of indoor meals and a lot of comfort food. I made some great chili this week, but my kids have been asking for chicken tenders and this recipe really does well with kids!
It’s low-carb/keto-friendly, and it’s grain free. I also have a dairy free variation (see below). We use chicken thighs because they have so much flavor and are very juicy and moist.
The pork-rind crumbs resemble panko bread crumbs and would be a good substitute in any dish. One jar of them has lasted me about 4 breaded dishes, so it’s good buy on Amazon or you can make your own in the food processor. They really give a good crunch to this dish.
To assemble the dish, cut the chicken into small strips, and put in the marinade while you make the breading and melt the butter. While the chicken is in the oven it’s a great time to put together a salad or other side dish!
