Keto-Friendly Oven-Fried Chicken Tenders

img_7812It’s been a rainy week.  I mean, month.  I mean, REALLY RAINY year.  Our little pond is a lake and our little ditch is now a stream.  There are lots of muddy paws and muddy boots!  Today I came home from the office and there were two ducks in our pond.  I’m sure they won’t stay, but I’m glad they came for a visit!

So, as much as I’d like to be grilling out on the deck every day, it’s just too wet.  I’ve been doing a lot of indoor meals and a lot of comfort food.  I made some great chili this week, but my kids have been asking for chicken tenders and this recipe really does well with kids!

img_7787It’s low-carb/keto-friendly, and it’s grain free.  I also have a dairy free variation (see below).  We use chicken thighs because they have so much flavor and are very juicy and moist.

The pork-rind crumbs resemble panko bread crumbs and would be a good substitute in any dish.  One jar of them has lasted me about 4 breaded dishes, so it’s good buy on Amazon or you can make your own in the food processor.  They really give a good crunch to this dish.

To assemble the dish, cut the chicken into small strips, and put in the marinade while  you make the breading and melt the butter.  While the chicken is in the oven it’s a great time to put together a salad or other side dish!

Keto-Friendly Oven Fried Chicken Strips

Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs cut into small strips
  • 1/2 cup milk
  • 1 tsp lemon juice
  • 1 tsp celery salt
  • 1/3 cup pork rind crumbs
  • 1/3 cup almond flour
  • 1/3 cup grated parmesan cheese
  • 1 tsp each garlic powder, onion powder
  • 1/2 tsp each salt, garlic salt, ground black pepper
  • 1/2 cup melted grass-fed butter
  • duck fat OR Duck Fat Spray (optional)

Instructions
 

  • Cut the thighs into small strips and add to glass dish or large ziplock bag.  Add the milk, lemon juice, and and 1 tsp celery salt.  Then seal/cover and set in fridge to marinate for 10-15 minutes.
    Make the breading.  Combine the pork rind crumbs, almond flour, Parmesan and seasonings in a shallow dish.  
    Melt the butter and pour half in a 11x17" baking sheet.  Dredge the strips a few at a time in the breading and set on the buttered pan.  Drizzle the rest of the melted butter over the top OR use Duck Fat Spray to oil the tops.
    Bake at 450 for 25 minutes or until lightly browned and cooked through.
