Quick and Easy Pimento Cheese

Labor Day is coming up and I really excited for two reasons…

Number one:  we are closing the office for 4 days to spend time as a family and

Number two:  my mom and dad are coming to visit!  They haven’t seen the new house yet and the kids are super excited for a visit from Baboo and Grams.

IMG_9795 (1)I am planning on making lots of picnic-type snacks to go along with whatever BBQ we cook.  Pimento Cheese will definitely be on the menu.

One thing I love about Pimento Cheese is that even though it’s a simple dish, it’s unexpectedly versatile.  I’ve seen it in sandwiches, deviled eggs, grits, on salads, with bacon, and even on a fried chicken sandwich.

My favorite way to eat it is on crackers – and these days we have only gluten-free crackers in the house.  My favorite GF crackers at the moment are Jilz crackers.  They come in several flavors, but my favorite is the sea salt.  They are simple and tasty.  Perfect to pair with any cheese or cheese spread.  I get them at THRIVE MARKET.

You can also dip carrots and celery or any other veggie you like.

The pimento cheese itself is keto-friendly – just use your favorite keto-crunchy to spread it on.  Try using a healthier-option mayo such as an avocado oil mayo.

FUN FACT:  In South Carolina, we pronounce it “Pimenah Cheese”

And here’s our chaos of the day:  Today as I was getting dinner ready, my children were playing on the deck at the water table.      …for about 2 minutes.  When I checked on them, all of them were buck naked and my middle child was standing in a bucket full of water with a popsicle.  Also, we are on day 11 of baby T sleep regression, so we are getting lots of face kicks and body slams by our insomniac toddler on a nightly basis.  I rubbed her down with Peace and Calming, magnesium oil, and diffused Chamomile and Sleepyize in her room tonight.  So…fingers crossed!   What’s everyone else’s chaos of the day?

Quick and Easy Pimento Cheese

  • 4 oz. cream cheese
  • 3/4 cup mayonnaise
  • 1 8oz block of extra sharp cheddar cheese, shredded (I used Tillamook)
  • 2oz or 4 oz jar or diced pimentos
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • dash of chili powder
  • dash of cumin

With a hand mixer or stand mixer, combine all ingredients except pimentos.  Mix on low speed until well combined.  Add pimentos and mix in slowly until incorporated.
